Cheesy Chipotle Black Bean Quesadillas
These cheesy chipotle black bean quesadillas come together so easy and are absolutely packed with flavour.
Quesadillas are honestly one of my favourite quick foods to make cuz they're so GOOD and so easy to make. And can you ever go wrong with cheese filled anything?? No, of course not
These quesadillas are filled with a delicious mixture of black beans, mushrooms, chipotle peppers in adobo sauce (they add so much flavour and smokiness) and lots of cheese. Perfection.
You could honestly substitute the beans with another protein like chicken or beef.
Ingredients for the Chipotle Black Bean Quesadillas
- Black beans
- Onion
- Garlic
- Mushroom
- Chipotle peppers in adobo sauce
- Cumin powder
- Monetary jack & Mozzarella cheese
- Tortillas
- Sour cream
- Lemon juice
TIPS
- Add all seasonings to taste!! Add a bit and check to see if it's enough and if not, add more. You can always add more but cannot take it out.
- Cover the pan with a lid while cooking so the cheese melts faster and evenly
- When cooking the quesadilla on both sides, add more oil or butter to make it crispier

Cheesy Chipotle Black Bean Quesadilla
Ingredients
- 3 tablespoon - oil
- 2 cups - black beans - 1 can 19 oz
- 1 - medium onion, chopped
- 4 - garlic cloves, minced
- 10 - mushroom, chopped
- 1 chipotle pepper in adobo sauce, chopped small
- 1 tablespoon - adobo sauce (in the same can as the pepper)
- ยผ - cumin powder
- ยพ teaspoon - salt (add to taste)
- 1 cup - Monterey jack cheese, shredded
- 1 cup - Mozzarella cheese, shredded
- 3-4 - tortilla, large
- handful - cilantro, chopped
Chipotle Sauce
- ยผ cup - sour cream
- 1-2 tablespoon - adobo sauce
- - lemon juice, to taste
- - salt, to taste
- 1 tablespoon - cilantro, chopped
Instructions
- Heat up a pan with some oil. Once heated, add the onions and garlic and sautรฉ for a few minutes until slightly softened. Add in the mushrooms and cook until softened.
- Add in the black beans and cook until a bit softened.
- Add in the chopped chipotle pepper and the adobo sauce and mix until combined. Season with salt, pepper, cumin powder and add cilantro. Set aside and let cool.
- Heat up a large pan, add butter or oil and place a tortilla in it. Spread the bean mixture on half the tortilla and cover with grated mozzarella and Monterey jack cheese. Fold over the other part of the tortilla and cook on both sides for a few minutes until golden brown and crispy and the cheese has melted.
- Cut and serve with the chipotle sauce and enjoy!!
Chipotle Sauce
- Mix together the sour cream, adobo sauce, cilantro, lemon juice, salt until combined. Season to taste.
