Ingredients

It looks like a lot of ingredients I know, BUT most of them are the spices to make the marinade and butter chicken sauce. Spices=flavour.

See recipe card BELOW for quantities.

  • Chicken breast
  • Plain yogurt
  • Lemon juice
  • Garlic cloves
  • Ginger
  • Garam masala
  • Ground cumin
  • Kashmiri chilli powder
  • Salt
  • Crushed dried coriander
  • Oil or ghee
  • Yellow onion
  • Cumin seeds
  • Tomato paste
  • Tomatoes
  • Heavy cream
  • Dried fenugreek leaves
  • French fries
  • Cheese curds for poutine

MARINATE THE CHICKEN

Seasoning every component helps build the flavour and taste throughout the dish, instead of just adding it to the end or just the sauce.

Mix the chicken with all the marinade ingredients in a small bowl until every piece is coated. Cover and let rest for at least 30 minutes at room temperature, to a couple hours in the fridge.

MAKING THE BUTTER CHICKEN SAUCE

Mise en place: I recommend prepping all the ingredients and spices before you start cooking so you don't miss anything and make it easier.

  1. Heat up a wide pan with oil over medium high heat and evenly spread the chicken in the pan. Let it cook for a few minutes. Once it develops colour on the bottom, flip over the pieces and cook for a few more minutes. Remove from pan and set aside.
  1. In the same pan with some more oil or ghee, sauté the onions and cumin seeds for 3-4 minutes. Add in the ginger and garlic paste and cook until softened.
  1. Add in the tomato paste and all the spices except fenugreek. Stir and cook the tomato paste until browned.
  1. Add in the tomatoes, stir, cover and cook for 15-20 minutes until completely softened. Once done, take off the heat and let it cool down slightly before transfer to a blender to blend into a smooth mixture.
  1. Place the pan back on the heat, melt some butter in it and add back the mixture. Pour in the cream, stir and cook for a few minutes.
  1. Add the chicken in and grind the fenugreek with your palms, sprinkling onto the butter chicken mixture. Stir and cook for 1-2 more minutes. Taste for seasonings and adjust.

  1. Garnish with cilantro or green onions and enjoy while still warm!!

Hint: I like the butter chicken to be extra hot so the cheese curds get all nice and melty.

Storage

Let the butter chicken cool down and store in an airtight container in the fridge for 4-5 days.

I recommend making the fries when you're ready to serve, instead of making them ahead of time. Just heat up the butter chicken and assemble it all together!

Top tips to make this butter chicken poutine

  • Add water whilst cooking the sauce: If the onions or tomatoes start to burn a bit, feel free to add a little bit of warm water to stop it from burning.
  • Crispy fries: You want the fries to be extra crispy so they don't get soggy under the butter chicken sauce

FAQ

What if I can't find poutine cheese curds?

You can take a block of a melty cheese, such as mozzarella, and cut into cubes.
