This chia pudding is an incredibly easy, delicious and nutritious breakfast or snack. I'm sharing two versions; matcha latte and berries. Both of which are scrumptIOUS
Chia pudding is one of my favourite breakfasts and to have for suhoor during Ramadan. There are so many different ways to make it but I'm sharing two of my favourite ones and I make these SO often.
What is Chia Pudding?
Chia pudding is made with chia seeds, an ancient grain. It's called an ancient grain because it has been grown the same way for more than a thousand years. They haven't been genetically modified or bred. It's like a bit of history with each bite.
They're a great source of fiber, which helps you stay full for longer as it digests slowlyโwhich makes it great to have for an easy suhoor or breakfast. It's also a good source of Omega 3 and can help improve heart health and reduce cholesterol levels. (My nutrition classes are paying off heh)
The chia seeds start "blooming" once they come into contact with liquid. They absorb anywhere from 12-27x their weight in liquid! Insane! Which is why it's SO IMPORTANT to soak them hours before you eat them because you do NOT want them to be absorbing more liquid inside you...
Once the chia seeds soak, they become almost gelatinous and have sort of a pudding texture. It's creamy and rich and takes on any flavour you throw at it.
Matcha latte version
If you love matcha or matcha lattes, you'll love this version of the pudding. It's essentially like making a matcha latte and adding chia seeds to it.
One of my favourite additions to this is adding some berries; either frozen or fresh. Strawberries or raspberries go so well with the matcha flavour.
Berry version
My go-to chia pudding is this berry version. I add a handful of whatever frozen berries I have on hand and add it to the mixture along with the other ingredients and let it set in the fridge. This really makes the berries release their juices and add so much flavour to the pudding.
My current berry rotation is blueberries and strawberries. Obsessed isn't enough to describe it.
Storing the chia pudding
If made with dairy milk, it will last about 3-5 days in the fridge in an airtight container.
Non-dairy milk will last for a bit longer, around 5-7 days in the fridge in an airtight container. Of course use your senses and smell it before eating it if it has been in the fridge for a couple days.
I only make enough for one serving so limiting the serving amount is a guaranteed way to make sure it doesn't go bad.
Warning
- Make sure to properly soak them - Chia seeds are soluble fiber and will absorb a LOT of liquid so if you don't soak them long enough or with enough liquid, they will continue to absorb more liquid as they pass through your digestive system. They can end up causing a blockage in your digestive tract or end up in constipation
- Limit the amount of chia seeds to 1.5-2 tablespoon per day - Chia seeds contain a ton of fiber so too many equals excessive fiber intake. Excessive fiber can cause constipation, stomach discomfort, bloating and more. So be careful.
Chia Pudding - 2 Ways
Ingredients
Matcha Chia Pudding
- 2 tablespoon - chia seeds
- 1 ยฝ teaspoon - matcha powder
- ยฝ cup - milk (or any liquid of choice)
- ยผ teaspoon - vanilla extract
- - handful of strawberries, chopped
- - handful of walnuts, chopped (optional)
- 1-2 tablespoon - honey (maple syrup, agave, sugar)
- - handful of dates, chopped (optional)
Berry Chia Pudding
- 2 tablespoon - chia seeds
- ยฝ cup - milk (or any liquid of choice)
- - handful of blueberries
- - handful of strawberries, chopped
- 1-2 tablespoon - honey (maple syrup, agave, sugar)
- - walnuts, chopped (optional)
- - handful of dates, chopped (optional)
Instructions
Matcha Chia Pudding
- In a serving container, whisk the matcha with a small amount of milk until completely smooth and there are no clumps remaining.
- Add in the chia seed, milk and vanilla extract. Stir to combine.
- Add in the honey (or sweetener of choice) and the strawberries, nuts and dates. Stir to combine.
- Cover and place in the fridge for 1-2 hours or overnight to set.
- Top with more nuts and strawberries if desired.
- Enjoy!
Berry Chia Pudding
- In a serving container, add the chia seeds and milk and stir to combine.
- Add in the berries and the honey (or sweetener of choice). Stir to make sure there are no chia clumps.
- Cover and place in the fridge for 1-2 hours or overnight to set.
- Top with more berries, dates and nuts if desired.
- Enjoy!
