It's simple, delicious and perfect for the summer. And did I mention you don't need to turn on the oven?
This is the strawberry version of the viral Lazy Cat Cake or Ahmed Alzamel Cake or Chocolate Crunch Cake. The various names aside, it's absolutely delicious.
It's a vanilla cake slightly soaked with strawberry milk, covered with cream cheese whipped cream frosting, a layer of strawberry ganache and chopped strawberries. And of course strawberry flavoured crispy cereal topping!
My mom wanted me to try out a strawberry, summery version of it so of course I obliged. It's SUPER EASY to make since you don't even need to bake the cake layer for it. You can get a premade one or just make a box mix!

Ingredients you'll need
See the recipe card BELOW for measurements.
- Vanilla cake - You can make it from scratch, buy it pre-made or make a box mix!
- Milk
- Strawberries
- Cream cheese - make sure it's full fat and the brick kind, not the kind in a tub.
- Sweetened condensed milk
- Vanilla extract
- White chocolate
- Heavy cream
- Strawberry jello powder - you can also use freeze dried strawberry powder for a stronger flavour. It'll also help you control the sweetness level and prevent it from becoming too sweet with the jello powder.
- Rice Krispies - puffed rice cereal
Instructions
- Blend together the milk and strawberries and remove the pulp by passing through the sieve. Place the cake in a 10" dish and pour the strawberry milk over the cake.
- Beat the cream cheese, sweetened condensed milk and vanilla together until smooth. Pour in the heavy cream while beating, until thick enough to almost stiff peaks. Don’t over mix because it will become runny
- Add cream cheese mixture onto the cake and smooth out into an even layer. Place in the fridge to chill and set.
- Combine the white chocolate and hot heavy cream. Once it melts, add in the strawberry jello powder. Mix until smooth. Let it cool.
- Mix the cereal with melted white chocolate in a container, then add in the strawberry jello powder. Close lid and shake until evenly coated..
- Pour ganache on the cake and smooth out. Make sure the ganache isn't warm and pour gently onto the cream cheese layer. You don't want it to make a hole into the cream cheese layer, making a mess (like I did). Place in fridge to set for a few hours.
- Evenly cover the top with the chopped strawberries once the ganache layer is set, or almost set. Otherwise they'll sink into it.
- Add the cereal topping while serving or right before serving. I like to let people add it to their own plate as desired. I do not recommend add it beforehand because it'll become soggy instead of crispy and crunchy.
Hint: Don't over-beat the cream cheese mixture after the whipped cream is added and thick. It will make the mixture runny and it won't set.
Storage
Cover with some plastic wrap and refrigerate for up to a week!
Top tips to make this strawberry dessert
- Butter or oil based cake: I recommend using an oil based cake because it remains soft and moist even when refrigerated. You need to chill the cream cheese frosting layer, which means the cake needs to be chilled as well. If using a butter based cake, it'll become hard, as butter does when cold. You will need to remove from the fridge about an hour before serving to make it soft.
- Beating the cream cheese frosting: Don't over-beat the cream cheese mixture after the whipped cream is added and thick. It will make the mixture runny. Stop once you achieve *almost* stiff peaks.
- Adding cereal topping before serving: I recommend adding on right before serving or letting people add it for themselves when eating. It's supposed to be crispy and crunchy. Adding it beforehand will make them all soggy and unappetizing.
FAQ
If you used cream cheese that comes in a tub/container, it will end up runny. It contains extra moisture and ingredients to make it spreadable, which prevents it from setting.
You want to use the brick kind which will firm up beautifully.
