These are so insanely easy to make and taste absolutely incredible! So easy to whip up for sudden guests or when you need a dessert to impress, without all the effort.
Despite not being huge dessert fans, my parents absolutely devoured these! I was honestly surprised by my dad, because this man wants even desserts to be savoury and spicy. So yeah, he’s not easily impressed.
The best part? You don't need to make any dough for these. Just a pack of sweet Hawaiian rolls or brioche type of dinner rolls!

These are made super easy by using Hawaiian sweet rolls or any brioche kind of dinner rolls. And just a couple more ingredients.

- Cream cheese - Make sure it's full fat and the block kind. Not the one that comes in a tub or container—that's a spread.
- Egg yolk
- White granulated sugar
- Lemon juice
- Vanilla extract
- Salt
- King’s Hawaiian Original Sweet Rolls
- Raspberries
- Raspberry jam
- Large egg
- Milk
- Powdered sugar
Instructions
These are beyond easy to make since all you really need to do is make the cheesecake filling. Which goes into the hollowed out sweet rolls and baked! You definitely can't get it wrong (not counting my first test of the recipe where I forgot them in the oven and burned them...)
Of course you start out with preheating the oven to 375F or 190C.
- Beat together the cream cheese and sugar until you get a smooth mixture.
- Add in the yolk, salt, vanilla and lemon juice. Beat until everything is all combined. Transfer mixture to a piping bag or ziploc bag.
- Cut a circle or square into the rolls, top down and scoop out the insides, creating a well.
- Pipe the filling into the hollowed out rolls. Add a little bit of jam and a couple raspberries on top.
- Brush the edges with egg wash to give it a shine and bake for 15-20 minutes. If they start to brown too fast, cover with aluminum foil.
- Let them cool down for 5-10 minutes and dust with powdered sugar before serving!
Hint: Making sure the cream cheese is room temperature help ensure a smooth and lump free mixture.
Variations
You can make these these with any berries or fruit you prefer. Strawberry, blueberry, cherry, apples, and even peaches would work beautifully!
Storage
After cooling, store in an airtight container at room temp for 1-2 days or refrigerate up to a week. Warm them up slightly before serving in a toaster oven or air fryer.

- Room temperature ingredients: Make sure the cream cheese is at room temperature to help beat the filling into a smooth and lump free mixture.
- Cover while baking: If you notice they're getting dark too quick as they’re baking, cover with some aluminum foil.
- Switch up the flavour: Swap raspberry jam with apricot, blueberry, or lemon curd, and try adding a pinch of cinnamon or lemon zest to the cream cheese filling for extra depth.

Yes! You can prepare the cheesecake filling and refrigerate until ready to use. You can also hollow out the rolls beforehand but make sure to store them in an airtight container or bag or they will dry out. I would recommend doing this step before you're ready to bake them.
Mascarpone is a great substitute if you prefer a milder flavour. Substitute with the same quantity.
